As Master Distiller, my responsibility is to turn intention into reality. Every decision from the ingredients we begin with to the way the spirit interacts with copper has one purpose: to create character, balance and smoothness you can feel in the glass.
At Purity, distillation is not about chasing a number. It is about understanding how spirit, copper and time work together.
Because the process only matters when you can experience the difference.
You cannot rush what you expect to be exceptional.
At Purity, we give the spirit time.
Our signature heart spirit is exposed to copper slowly and deliberately — across 34 levels for 12 hours in Signature 34, and across 51 levels for 20 hours in Connoisseur 51 Reserve.
This extended copper surface contact helps us refine the heart and shape the character, balance and smoothness we are looking for.
The numbers matter because they represent the journey.
But the goal has never been the number itself.
The goal is what happens in the glass.
If the ingredients are right, the spirit has somewhere meaningful to begin.
Purity starts with carefully selected grains, including organic winter wheat and malted barley, chosen for the character they bring to our signature heart spirit.
From there, every part of the process has a role.
The grain creates the foundation. The copper helps shape the heart. Time allows the process to unfold. And Purity water brings everything into balance.
Nothing is there simply because tradition says it should be.
Every element is there because it contributes to the finished experience.
Precision is knowing when the spirit is ready.
Distillation is not simply operating a still.
It is listening to the spirit as it changes.
Aroma. Texture. Character. Balance.
Small adjustments can change everything.
The temperature. The flow. The contact with copper. The moment a cut is made.

Because the difference between technically correct and truly exceptional often lives in details most people will never see.
The process is complex. The reaction should be simple.
We can talk about grains, copper, time and technique. We can explain 34 levels. We can explain 51 levels. We can explain 12 hours and 20 hours of extended copper surface contact.
But none of those things are the reason someone remembers Purity.
