Scientifically, copper reacts with sulfur compounds naturally produced during fermentation. These compounds, if left unchecked, lead to harsh, acrid flavors and a burning finish. Each pass through the still allows vapor to condense, flow, and rise again. The visual, seen through glass portholes on each level, is mesmerizing.
