Mango Aperol Vodka Sour

INGREDIENTS
1 oz Purity Connoisseur 51 Reserve Organic Vodka
3/4 oz mango purée
1 oz Aperol
3/4 oz lemon juice
1/2 oz simple syrup
1 egg white
METHOD
Dry shake all ingredients (no ice) to create a silky foam. Add ice, shake again until well-chilled, then strain into a coupe glass. Garnish with fresh mango.
