The Clover Club was one of the great gin cocktails of the early 1900s: gin, raspberry, lemon and a silky foam, served in the most elegant bars of its day. The Northern Velvet is our Nordic take on it.

Gin 34 Old Tom gives the drink a softer, rounder body that suits the raspberry perfectly, while lemon keeps it bright and the foam gives it its name: smooth as velvet.

Pink, plush and quietly elegant.

How to make it

Chill a coupe glass.

Add Gin 34 Old Tom, raspberry syrup, lemon juice and egg white to a shaker. Shake hard without ice for about 15 seconds.

Add ice and shake again until well chilled.

Double strain into the chilled coupe and garnish with fresh raspberries.

From the Master Blender

Dry shake first, without ice, for a full 15 seconds. That is the secret to a dense, velvety foam that holds its shape all the way to the last sip.
